滋補山藥蓮子鴨湯

Nourishing Duck Soup with Yam and

Lotus Seeds

材料:(4人份量)

鴨1隻

山藥(刨皮、切段)300克

杞子(泡軟)30克

新鮮蓮子100克

清水3公升

鹽適量

 

步驟:

1) 燉鍋注入清水,放入洗淨的全鴨,大火煮滾,撇清浮沫和雜質。

2) 蓋上鍋蓋,用小火煮約20分鐘。

3) 放入山藥、鮮蓮子和杞子,煮約30分鐘,下鹽調味即可。

 

Ingredients: (4 servings)

1 duck

300 g yam (peeled and sectioned)

30 g Qi Zi (soaked)

100 g fresh lotus seeds

3 liters water

salt

 

Steps:

(1) Add water and rinsed duck into a cocotte. Bring to the boil over high heat. Skim floated extracts.

(2) Cover and cook over low heat for about 20 minutes.

  • Put in yam, fresh lotus seeds and Qi Zi. Cook for about 30 minutes. Season with salt and serve.

 

Tips:
建議用老鴨,滋補效果更佳。山藥即新鮮淮山,其黏液雖令皮膚痕癢,但具一定營養價值,應盡量保留。

It is suggested to use mature duck which has better nourishing effect. Slime of yam makes skin itchy, but it is nourishing and should be kept at certain extent.
