鮮蔬無水煮三文魚
Waterless Cooked Salmon with Vegetables

 

材料: (4人份量)

三文魚2件(約300克)

青、黃意大利青瓜(切薄片)各50克

三色椒(切條)80克

日本南瓜(連皮切薄片)80克

椰菜花(浸洗,切件)80克

紅、白洋葱(切條)各50克

本菇(切尾)1包

 

調味料︰

橄欖油1湯匙

鹽、黑胡椒碎各適量

 

步驟:

1)蔬菜放入鑄鐵鍋,下調味料拌勻。

2)三文魚下鹽、黑胡椒碎調味,放在蔬菜上,蓋上鍋蓋,開小火(低溫)煮10至12分鐘即可。

 

Ingredients:(4 servings)

2 pieces (about 300 g) salmon

50 g green zucchini (sliced thinly)

50 g yellow zucchini (sliced thinly)

80 g bell peppers (cut into strips)

80 g Japanese pumpkin (sliced thinly with skin)

80 g cauliflower (soaked and cut into pieces)

50 g red onion (cut into strips)

50 g white onion (cut into strips)

1 pack Shimeji mushrooms (cut off the ends)

 

Seasoning:

1 tbsp olive oil

salt & crushed black pepper

 

Steps:

(1)Put vegetables into a cocotte and mix with seasoning.

(2)\Season salmon with salt and crushed black pepper and put on top of the vegetables. Cover and cook over low heat for 10-12 minutes. Serve.

Tips: 不下橄欖油也可,享調時三文魚的甘香油份會釋放到蔬菜中。

Olive oil can be omitted since the fat of salmon will go into the vegetables during cooking.
