紅白椰菜無水煮鮮鮑魚
Waterless Cooked Abalones with
Round Cabbage Leaves

材料: (4人份量)
鮮鮑魚8隻
紅椰菜4片
白椰菜4片
紅洋葱半個
白洋葱半個
娃娃菜1棵
絲瓜(削硬皮,切片)半個
本菇(切尾)半包

調味料︰
鹽、黑胡椒碎各適量

步驟:
1) 鮮鮑魚洗擦乾淨,用匙起肉,清除內臟,撕去鮑魚嘴,沖淨,瀝乾,在頂部劃花。

2) 椰菜切去硬梗,切塊;洋葱切圈。

3) 娃娃菜切去底部,切塊。

4) 所有蔬菜鋪在鑄鐵鍋中,灑上調味料。

5) 鮮鮑魚放在蔬菜上,灑少許鹽,蓋上鍋蓋,用小火(低溫)煮12至15分鐘即可。

 

Ingredients:(4 servings)
8 fresh abalones
4 red cabbage leaves
4 white cabbage leaves
½ red onion
½ onion
1 stalk baby cabbage
½ loofah (shaved hard skin and sliced)
½ pack Shimeji mushrooms

Seasoning:
salt & crushed black pepper

Steps:
(1) Rub and rinse fresh abalones. Scoop out the meat with a spoon. Remove the entrails. Rinse and drain. Slit cross pattern on the top.
(2) Cut off hard stalk from cabbage leaves. Cut into small pieces. Cut onion into rings.
(3) Remove the bottom of baby cabbage and cut into pieces.
(4) Spread the vegetables into a braiser. Sprinkle over seasoning.
(5)Put abalones on top of the vegetables. Sprinkle over a little salt and cover. Cook over low heat for 12 to 15 minutes. Serve.

Tips: 娃娃菜的水分含量高,是「無水煮」的靈魂所在。
Baby cabbage has high water content and is the soul of waterless cooking.
